Kitchen, Easter and such

Thanks everyone for your enthusiasm over the kitchen!! I've had some texts, phone calls, comments, etc. all wanting a peek at the progress of the kitchen. I say progress because I thought by now, our kitchen would be fully functioning, but it is not. As is the case for most home remodeling projects, it can just take longer than you expect!! But I will give you what we have so far :)

This is what our kitchen looked like last fall. So it was better than when we moved in, but still reeked of 80's refinished cabinets and aqua blue tile, original appliances (our home was built in '62), and ugly soffet above cabinets. Plus, it did truly reek. I am not sure why, but it just smelled old, musty, stale, like moldy food stuck somewhere we could not see. All the scentsy bars and Yankee candles could not completely cover up this smell. It was still there when I walked in after being out of the house for a while.
We always hated those hanging cabinets above the peninsula, so a few months ago, Matt actually went to town and tore them out. It opened it up a bit and we realized how BADLY we wanted to redo our kitchen. So the project began...

Late March, we had the demolition of our kitchen. They took out everything except our fridge (we plan on hanging onto that one for a little while).


The night of the demolition, Matt came home and started tearing down the soffit. He started with a hammer, but it wasn't hardly putting a dent in it, so I borrowed a sledge hammer from our neighbors. Boy that did the trick. A little too well.
Here is a pic of Matt, taking a swing and this pic was probably taken right before one of those long beams fell and hit him square on the top of his head. Blood everywhere. I almost called 911, but Matt just grabbed a kitchen towel, threw it on top of his head and drove to the hospital. Our kids were sleeping, so I had to stay home.
He came home with staples in his head and a fury over this incident that caused him to sledge hammer the rest of the soffit at midnight while we and the rest of Concord slept. When I woke up the next morning it was gone.We filled in the floor where the counters had previously existed and we hired a friend of ours to come and wire for electrical, move our plumbing and patch up the drywall. We were changing from a wall oven and microwave to a range with microwave hood, which required new outlets. We also changed the location of our sink and dishwasher, requiring plumbing movement. We also needed new drywall and insulation where the soffit had existed, because right then it stood as a huge gaping hole into our attic. :)


Once that work was mostly completed, our drywall was up and ready for texturing.


The next day after texturing, the new cabinets showed up!! They were so beautiful. Matt and I had it narrowed down to 2 styles for such a long time and we had chosen one that was a bit darker, but at last minute, Matt changed to this style. We are so glad he did!!

We got rid of the peninsula counter that jutted out and put an island in. I am LOVING this island!! I now see what the fuss is all about :) We decided to make our island more of a focal point by putting in cream colored cabinets instead of the maple. Matt isn't too sure about it, but I love it.
So here is the new kitchen with our new cabinets.
The next day, they put in the countertops and sink. We went with a granite counter with a 6-inch backsplash. We debated whether to do a tile backsplash, but we felt our workload with this project was large enough as it was. We may end up tiling in some future year, but for now, we are sticking with our 6-incher.
It feels so much more open and bigger without the soffit and counter jutting out.
We are hanging onto our fridge because the stainless steel style we want is pretty pricey, so we are waiting for a good sale. Our previous dishwasher was actually in pretty good condition, but older. However, to re-install it would cost more than what the washer is actually worth, so we are also scoping out deals until then. So the hole you see in this pic below where the dishwasher will go may be a hole for some time.
Our range and microwave arrived the next day after the counters. I also painted the kitchen and dining the green color that was in the adjacent living area. We are having some problems with some of our outlets, so while we wait for those to get fixed, we will wait on installing the microwave. We also need our sink hooked up, so while our faucet is in place and sink is there, we actually can't use it yet. Soon, hopefully!

So this is pretty much what our kitchen looks like today, in all its glorious mess :) I should have picked up for the picture at least, but hey now you get a glimpse of our real life! There is still a few things to do: install the microwave (which is in that big box), hook up our sink, fix outlets, install recessed lighting, trim out our window and put in our hanging pendant light. I will be sure and post when all those things are done!!
I also painted our dining room green. It is hard to see with the lighting in these pics, but I like it so much better than the blonde color that used to be here.

Whew!! I should have put that as a separate post. But here is our fun Easter weekend.

The kids in their Easter clothes. Matt actually picked out their stuff while on a trip to Costco one day. He was pretty excited about Nolan's outfit, especially.


The day before Easter, we headed to an egg hunt put on down the road at the swim club. The kids got to see lots of neighborhood and school friends and we found out that the price of the swim club membership was lowered this year, so we will be joining!! We live a block from the pool, so this will make for a convenient way to cool off this summer.Easter morning came too early for the kids. Reagan was up at 5am, looking for her basket of candy.
Both enjoyed their loot and I think that Nolan ate most of his candy in one day (probably one sitting). So when he laid down that afternoon and said his stomach hurt, we were not a bit surprised. It is detox time this week, though. Tough for the kids---when they ask me for a snack and I offer carrots or apples, they look at me like I am from another planet.

It was a neat opporunity to teach the kids this year about why we really celebrate Easter. Last night for family night, Matt asked the kids what the most important thing about Easter was. Without hesitating, Reagan answered, "Jesus was resurrected!" And my proud mom heart almost exploded. What a great gift it is to teach my children what is most important in life. Blessings abound here for sure!

Day at the Snow

The last Saturday in February, Matt took the kids on a day trip to the snow with the young men in our ward. This worked out so nice since I had a volleyball tournament for young womens that morning. This was Nolan's first snow experience! I asked Matt to take loads of photos and he certainly got some good ones. I will share my favorites below.

The view from where they spent the day. It wasn't as far away as Tahoe, but still just as pretty, it looks like!


As for me, I seriously got an entire day to myself. After getting home from the tournament, I cleaned my entire house, top to bottom (which lasted less than 24 hours...sigh), then worked outside planting some shade plants and replacing dead salvia plants with some more daisy shrubs. I took my time scouting out Home Depot for our kitchen remodel (yes, we are remodeling it!) and also planning what the heck to do with our side yard (pics of that to come). A good day and my family made it home in time for dinner :)

Boomers

We spent a Saturday afternoon discovering Boomers Fun Center in Livermore. I can't believe we have lived here all these years and never been! Livermore sounds so far away, but it wasn't really that long of a drive! Matt found some coupons online and for $15, we got miniature golf, go karts and tons of arcade games. It was a total deal!

This was Reagan and Nolan's first experience with mini golf. It was a riot to watch them because as you know, golf can be pretty frustrating (think Happy Gilmore: "Are you too good for your home???") At one point, Nolan screeched at the top of his lungs in frustration and threw his golf club, narrowly missing the family behind us.



By the end of the game, they were just picking up their ball and placing it in the hole. All in all, though, a SUPER fun course!

Nolan was too short, but Matt and Reagan got to ride the go-karts. Here they are, anxiously waiting.....

And they are OFF!Coming round the bend. I think Reagan thought she was steering the whole time :)Super fun afternoon, we even got to hit up Arby's, which is a major favorite of Matt's. Although, someday there maybe one on Concord. They are, after all, building an In-N-Out here now!

Nolan turned 3!

Nolan celebrated the big 03 on January 11th! He was so into his birthday this year and relished in the presents, singing and cake. He still occasionally asks to sing happy birthday and sits there smiling while I do. We love Nolan to bits and are very glad he joined our family three years ago!

Here are some fun things about Nolan as a 3 year old:

-he is talking up a storm. He has also started imaginative play where I hear him talking to his trains and he has the "choo-choo" down perfect. He actually sounds like a real train!
-he still is obsessed with trains
-Nolan loves nursery and run straight there when amen is said
-he rides his tricycle perfectly
-he says "Yes, sir" all the time and I am not positive, but I think he is saying, yes, sure. ???
-he loves candy and would eat it all day if I let him
-is finally used to having sugar cereal gone in the morning. He asks for "pop cereal" which is Rice Krispies
-hits, pinches, bites and can be a bully (proof that he is really 3)

We hosted playgroup with his friends two days after his birthday, so we did a party for him.
We had pizza (his favorite) for his actual birthday and had a train cake.


Even though Nolan gives us a run for our money every single day, we still love him so much. Happy Birthday, Nolan!!

A Few Good Recipes

I am always looking for new recipes and pinterest has been a great tool that way. We have tried some and most have been a hit. It seems when I try something new, it either falls into 1 of 3 categories:

1. Didn't like it.
2. Liked it, but probably won't make it again.
3. Loved it, will become regular addition to our dinner repertoire.

Number 3 doesn't happen very often. It has to taste REALLY good and also be easy, cheap and my whole family has to like it.

Here are some recipes that have become #3's:

OVEN BAKED PARMESAN SEASONED FRIES

NOTE: The amounts listed are for every one pound of fries. One pound of fries is the equivelant of appoximately 3 medium potatoes. (I just double or triple the recipe to fit within my needs).

Ingredients:

1 pound of medium russet potatoes (approx 3 medium potatoes)
1 1/2 TBSP of Extra Virgin Olive Oil
1/4 tsp Dried Thyme
1/4 tsp Dried Oregano
1/8 tsp Dried Rosemary
1/4 tsp of Garlic Powder
1/4 tsp of Old Bay Seasoning
2 TBSP of Kraft Parmesan Style Grated Cheese (I used reduced fat)

Directions:

*Preheat oven to 425.
*Wash and cut potatoes into 1/8ths.
*Place on a cookie sheet that has been lined with foil (I used Reynolds Release foil so that they will not stick, but you could also either use non-stick cooking spray or lightly grease the top of the foil with extra virgin olive oil).
*Mix all of the spices and the parmesan cheese in a small bowl.
*Place all of the potatoes (remember we are talking about one pound at a time) into a gallon size freezer bag, add olive oil and the parmesan cheese/spice mixture to the bag.
*Seal the bag and shake until the potatoes are evenly coated.
*Once thoroughly coated dump onto the prepared cookie sheet and spread in a single layer.
* Bake 30-45 minutes or until tender and lightly golden brown. (Baking times will vary depending on the amount of fries that you make and the size that you cut them). For the ones shown in the picture they were baked at 425 for 45 minutes.

These are so good that we have made them twice this week already! I am not sure what Old Bay Spice is, so I just used seasoned salt. Also, I cut my potato into 1/9th's, so three slices one way, three the other. Thicker fry, but that makes them really good!!


CROCKPOT TERIYAKI CHICKEN

12 boneless skinless chicken thighs (about 3 pounds)
3/4 cup sugar
3/4 cup soy sauce
6 tablespoons cider vinegar
3/4 teaspoon ground ginger
3/4 teaspoon minced garlic
1/4 teaspoon pepper
4 1/2 teaspoons cornstarch
4 1/2 teaspoons cold water
Hot cooked long grain rice

Place chicken in a 4 qt. slow cooker. In a large bowl, combine the sugar, soy sauce, cider vinegar, ginger, garlic and pepper. Pour over chicken. Cover and cook on low for 4 to 5 hours or until chicken is tender. Remove chicken to a serving platter; keep warm. Skim fat from cooking liquid. Place liquid in a saucepan and bring to a boil. Combine cornstarch and water until smooth. Gradually stir into liquid and stir until sauce is thickend. Serve with chicken and rice.

We loved this so much, there wasn't any leftovers! Granted, I did cut the recipe in half. I think the trick was the chicken thighs. That meat is so much more tender and flavorful. I trimmed as much fat off the meat before placing in my crockpot. So delicious!


BASIL AND FRESH MOZZ PIZZA

I don't have an original recipe here, I pretty much looked at a few other recipes for marguerita pizza and came up with my own. It was so good! I don't think I will be able to make it any other way now.

I recipe crust (I use Trader Joe's fresh pizza dough)
pizza sauce
parmesan cheese
8 oz fresh mozzarella
fresh basil leaves

Roll out the dough, put a bit of sauce on. Sprinkle Kraft parmesan cheese on top generously. Slice the mozzarella and place on top of sauce. Julienne slice the fresh basil leaves and place on top, sprinkle with more parmesan cheese. Bake at 450 for 10-15 minutes. Really really good.
